Now the restaurant will permanently become a kaiseki destination called Uka under the direction of celebrated chefs Yoshitaka Mitsue and Shingo Kato, who will occupy the 30-seat restaurant and tasting counter with one of the highest-end expressions of Japanese cuisine in town in early June 2023. With a nine-course kaiseki priced at around $300 per person (before tip and tax), with available wine and sake pairings at $120 per person, Uka is poised to become the most rarefied Japanese food experience in Hollywood, certainly aiming for Michelin recognition in the coming months and years. “Whether it’s Pokémon meeting Japanese craft, the art of the ramen bowl, contemporary Japanese graphic art, classic and contemporary films, gastronomy, or manga, our goal is to provide an immersive cultural experience that intrigues the five senses. Highlights include Masuda’s “Kawaii Timeline” (created in collaboration with Kyoto University of the Arts) depicting kawaii culture’s historical roots from post-war media and shōjo manga (comic books for girls) to the 1990s where it evolved into a global phenomenon rooted in Tokyo’s Harajuku district. The chef duo’s exquisite approach to interlocally foraged ingredients and accoutrements at UKA shines alongside their careful aging and curing methods of preparing premium fresh seafood that draws out the flavor of the fish, a revered nod to Chef Mitsue’s early training in the fish markets of Japan. Kohei Nawa was born in Osaka, Japan in 1975 and now lives and works in Kyoto. He received his MFA, and PhD in Fine Arts from the Kyoto City University of Art. In addition to his work as an artist, Nawa is the founder and director of SANDWICH, a creative platform for contemporary art, design, and architecture projects.
